INGREDIENTS
- ½ (10-ounce) bag frozen spinach, thawed
- 6 large eggs
- 2 tablespoons olive oil
- ½ teaspoon dried Italian seasoning
- Salt and pepper
- ¼ cup ricotta cheese
- ¼ cup grated parmesan cheese
- 2 ½ ounces shredded mozzarella cheese
- 1 ounce sliced pepperoni
INSTRUCTIONS
- Preheat the oven to 375°F and grease a pie plate with cooking spray.
- Defrost the frozen spinach in the microwave for 4 minutes then squeeze out the water.
- Whisk together the eggs, olive oil, Italian seasoning, salt and pepper in a bowl.
- Stir in the ricotta cheese, parmesan cheese, and drained spinach until well combined.
- Pour the mixture into the pie plate and top with mozzarella and pepperoni.
- Bake for 35 to 40 minutes until the egg is set and the cheese lightly browned. Makes 4 servings.
