INGREDIENTS
- 1 tablespoon olive oil
- ½ cup diced yellow onion
- 8 ounces canned tuna
- ¼ cup mayonnaise
- 2 large eggs, whisked
- 2 ounces shredded mozzarella cheese
- Salt and pepper
- 1 green onion, sliced thin
INSTRUCTIONS
- Heat the oil in a skillet over medium heat.
- Add the onion and cook until translucent, about 5 minutes.
- Drain the tuna then flake it into the skillet and stir in the remaining ingredients.
- Season with salt and pepper and cook for 2 minutes or until the cheese melts.
- Spoon into a bowl and top with sliced green onion to serve. Makes 2 servings.
