INGREDIENTS
- 4 deboned chicken thighs
- Salt and pepper
- 1 small zucchini, sliced
- 2 small carrots, peeled and sliced
- 1 small parsnip, peeled and sliced
- 2 cloves garlic, sliced
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2 teaspoons fresh chopped rosemary
INSTRUCTIONS
- Preheat the oven to 350°F and lightly grease a small rimmed baking sheet with cooking spray.
- Place the chicken thighs on the baking sheet and season with salt and pepper.
- Arrange the veggies around the chicken then sprinkle with sliced garlic.
- Whisk together the remaining ingredients then drizzle over the chicken and veggies.
- Bake for 30 minutes then broil for 3 to 5 minutes until the skins are crisp. Makes 2 servings.
