INGREDIENTS
- 100 grams chopped cauliflower
- 1 large avocado
- 1 tablespoon fresh lime juice
- 2 tablespoons diced red onion
- 2 tablespoons olive oil
- 2 (6-ounce) boneless salmon fillets
- Salt and pepper
INSTRUCTIONS
- Place the cauliflower in a food processor and pulse into rice-like grains.
- Grease a skillet with cooking spray and heat over medium heat.
- Add the cauliflower rice and cook, covered, for 8 minutes until tender. Set aside.
- Combine the avocado, lime juice and red onion in a food processor and blend smooth.
- Heat the oil in a large skillet over medium-high heat.
- Season the salmon with salt and pepper then add to the skillet skin-side down.
- Cook for 4 to 5 minutes until seared then flip and cook for another 4 to 5 minutes.
- Serve the salmon over a bed of cauliflower rice topped with the avocado cream. Makes 2 servings.
